Part fairy cake, part flapjack. A recipe.

I’ve had this recipe on a scrappy piece of paper for so long, it is about time I wrote it up properly. Just in case the paper is lost (which has happened a number of times and my heart starts pounding. I kick myself for not having written it elsewhere and promise myself I will as soon as I find it. Then I find it. And I calm down. Then forget to write it up.)

The original recipe is from my mum’s very old Be-Ro flour recipe book. You can still get the Be-Ro book but it no longer includes this recipe. It costs £1.50 and is a bargain.They call the recipe Crunchies but they aren’t *that* crunchie. I don’t know what I’d call them, really. Iced Biscuits will have to do.

This is my adapted recipe anyway. It makes 28/30 biscuits depending on how big you want them. My recipe is in ounces so that’s how I’m giving it you.

  • 6 oz butter
  • 4oz caster sugar
  • 2 tsp golden syrup
  • 1 – 2 tsp boiling water
  • a dash of vanilla extract
  • 6 oz self raising flour
  • 3 oz oats
Cream the butter and sugar together.
Add the syrup and extract, flour and oats.
If too dry add a little boiling water a bit at a time.
Mix into a dough ball.
Cut into quarters then each quarter make into another ball and cut into 6 – 8 pieces.
Make into round balls and place on greased baking tray.
Cook at 180 (or 160 fan) for 10 – 12 minutes.
When they are cooked take out and leave to cool on the tray.
Make up some icing (according to packet instructions. I never weigh icing sugar!)
Put a blob on a few at a time and sprinkle on the sprinkles. Don’t leave the spinkles until the end as the icing will dry and the sprinkles will just roll right off.
And there you have it.

    Thank you for sharing the recipe! I shall try it in the summer with GF substitutions – it looks like the sort of recipe that should stand up well.

    I think it would go quite well with GF flour, Jenni as the mixture is quite wet.

    Paul’s grandma gave me three old Be-ro books ages back. I’ll have to have a look to see if this recipe is in one of them! They’re a great heirloom :)

    And I might try the recipe too. It sounds fab!

        I’d forgotten about the ‘ordinary coal oven’ part until I looked the post out… still can’t get over that :) So glad she gave them to me!

    Hi Helen – I made these biscuits last week and they went down VERY well with my family – thank you! I might try making them with chocolate chips next time (instead of icing them – ‘cos I’m lazy) – do you think that would work?!
